Our Pechuga de Mole Ancestral is a true masterpiece, blending the richness of our Ancestral process with the complexity of the iconic Mole Poblano recipe. During a second distillation of our Espadín Unión, authentic mole ingredients—cacao, roasted chilies, and spices—are added, creating a mezcal that offers a sensory experience like no other. Rich aromas of dark chocolate, roasted spices, and smoky sweetness greet you on the nose, balanced by a subtle fruitiness. The palate is full-bodied and complex, revealing layers of cacao, warm spices, and a touch of chili heat. Creamy, buttery textures enhance the smooth, smoky finish. Our Process
This mezcal is crafted using our unique Ancestral Process. The agave is hand-crushed in wooden “canoas”, a labor-intensive method that honors ancient mezcal craftsmanship. Fermentation occurs in bovine skin, imparting a distinctive lactic and buttery undertone that adds depth and complexity. Finally, it is distilled in a traditional Filipino-style still, elevating its unique character. These ancient traditions, preserved by our families in Puebla, give our mezcal its unparalleled authenticity and rich heritage.
