Our Papalometl Ancestral, crafted from wild Agave Potatorum, is a tribute to the rugged, untamed land from which it comes. Made using an ancestral process, this mezcal delivers a rich and complex sensory experience, perfect for those seeking a bold, rustic spirit that reflects the true essence of wild agave.

 

Sensory Profile:

  • Aroma: A complex blend of sweet, fruity top notes—pear, banana, and apple—balanced by herbal and earthy undertones. Subtle hints of pine, fresh grass, and floral rose are intertwined with a slight nutty warmth. Expect both fresh green aromas and smoky, resinous qualities from the higher alcohols.
  • Taste: The first sip reveals a sweet and fruity profile, with notes of ripe banana, pear, and caramel. As the journey continues, herbaceous and earthy elements emerge, giving the mezcal a rustic, wild character. A touch of acidity and sourness adds balance, while smoky, woody undertones provide depth. The buttery texture, along with light citrus and floral hints, rounds out the experience, finishing with a lingering warm, smoky note.

Our Process

This mezcal is crafted using our unique Ancestral Process. The agave is hand-crushed in wooden “canoas”, a labor-intensive method that honors ancient mezcal craftsmanship. Fermentation occurs in bovine skin, imparting a distinctive lactic and buttery undertone that adds depth and complexity. Finally, it is distilled in a traditional Filipino-style still, elevating its unique character. These ancient traditions, preserved by our families in Puebla, give our mezcal its unparalleled authenticity and rich heritage.
