Sensory Profile:
- Aroma: A complex blend of fruity notes (pear, apple) with hints of light herbs, floral rose, and a touch of citrus. Subtle woody and earthy tones add depth.
- Taste: The palate offers fruity sweetness layered with creamy, buttery textures from higher alcohols and fatty acids. Vibrant floral and citrus notes are supported by a woody, earthy base, with a warm finish that amplifies the flavors.
- Mouthfeel: Rich and slightly oily, with the warmth of alcohol providing structure without overpowering. The result is a well-rounded and smooth finish, leaving a lasting impression.
Our Process
This mezcal is crafted using our unique Ancestral Process. The agave is hand-crushed in wooden “canoas”, a labor-intensive method that honors ancient mezcal craftsmanship. Fermentation occurs in bovine skin, imparting a distinctive lactic and buttery undertone that adds depth and complexity. Finally, it is distilled in a traditional Filipino-style still, elevating its unique character. These ancient traditions, preserved by our families in Puebla, give our mezcal its unparalleled authenticity and rich heritage.
